Working with eggs in drinks can be a little intimidating. I often am asked whether or not using eggs is safe. Egg whites from pasteurized eggs are safe for cocktails. Be sure to check the labels so you know what you're using.

Egg whites give your drinks a silky texture with a foamy layer on top. You can also use liquid egg whites, aquafaba or non-egg foam alternative for cocktails to attain a similar effect if you'd prefer.

Ready to get cracking? Here are some favorite recipes for the holiday weekend:

honey lemon whiskey sour

The secret to a great whiskey sour is the egg white. Shaken into the mix, it transforms the drink into something silky and light — a texture no simple syrup can replicate. This version doubles down on that refinement, swapping sugar for local honey.

pear vodka sour

Pear vodka, fresh lemon and elderflower liqueur combine with an egg white for a creamy, dreamy pear vodka sour cocktail that you can easily make at home. Pear infused vodka helps put this fruit front and center with sweetness from the elderflower liqueur, lemon juice to brighten the drink, and an egg while to add a silky texture and foamy top.

aperol sour

An Aperol sour is a refreshing drink that combines the zesty tang of lemon juice with the unique bitterness of Aperol, all wrapped in a silky, frothy finish from a touch of egg white.
