Happy Syrup Sunday, Reader!
Fall has a lot going for it flavor-wise, but apple might be at the top of the list for me.
I'm not really a cake person β given the choice, I'd much rather celebrate a birthday with a slice of pie. Growing up, pie was often on the table for special occasions, and apple is my dad's favorite, so I still make him one every year for his birthday.
In my 20s, I bought a pie cookbook and worked my way through it recipe by recipe. Apple is the one I come back to every single year β for Thanksgiving, for birthdays, for any excuse I can find.

a note on whole spicesβ Ground spices will make your syrup cloudy and gritty, but whole spices give you all that flavor with none of the texture. I like to buy whole spices, especially cinnamon sticks, in bulk because I use them for garnishes just as much as I do for syrups. Worth having a good stash on hand all season long! |

Here's a little secret: The apples you simmer to make this syrup are just as good as the syrup itself. Spoon them warm over a scoop of vanilla ice cream and drizzle a little syrup over the top. It takes about 30 seconds and feels like dessert at a snazzy restaurant. Don't let them go to waste!
